ITALIAN CREAMY MUSHROOM RISOTTO – When you hear the phrase Italian food what is the first dish that pops up in your mind? It’s probably not Risotto. Well, it turns out that this creamy rice based dish is more popular in Italy as compared to Pasta or pizza.

Traditionally, Arborio rice is used for risotto because, as it cooks, it releases starch creating a creamy consistency.

Here is the recipe of ITALIAN CREAMY MUSHROOM RISOTTO
Recipe makes: 2-4 servings
Prep time:10 mins
Cook time: 25 mins
Ingredients
- 500 g chicken
- 400 g Arborio
- 1 chopped medium onion
- 3 tbsp of chopped garlic
- 1 tbsp of blackpepper powder
- 1 tsp of whitepepper powder
- Cheese as per taste
- 1 tbsp of salt
- 2 tbsp of olive oil
- 1 cup whipping cream
- 3 tbsp of butter
- 2 chicken cubes
- 1 tbsp chopped chives
- 400 g mushrooms
Method
- Pre-heat the pan and pour the oil into it.
- Add chicken and fry for 5 min over low- medium heat
- Add the black and white peppers. Mix!
- Add salt
- When cooked take the chicken out of the pan and set it aside
- Add onions and garlic Stir and fry for 10 mins or until the onion is soft but not colored.
- Then add rice and warm it up
- Add water when the rice turns brown. gradually
- Add chicken stalk cubes stir until dissolved and add 3 cups of water to it.
- Keep stirring and add mushrooms and chopped chives.
- When the water has evaporated add cream. mix and cook
- Add the chicken
- Top it off with cheese and butter mix Mix, serve and enjoy!
